Remove old office versions program

I've been poking around the WindowsApps folder where all the Windows Store apps are installed and I noticed old versions of all the apps co-existing with the up-to-date versions of the same apps. The apps in question are the Microsoft apps like Mail, Music, etc. The RTM versions exist in their entirety even though they aren't used. Is this a good idea, or a fatal mistake? Also, why wouldn't the Store replace the original versions of a particular app once an update was installed?
